smoking kahawai  using an all time kiwi special.. manuka sawdust. You only want a handful or two of manuka sawdust - too much gives a bitter taste. Marinade the filets in lemon juice before hand for an hour, that's how I do it and than season with salt, pepper, thyme or dill and smoke it for about 20-25 min. Yumm...you cant go wrong
